I ndividual parcels were cold soaked for 2-3 days, fermented at moderate temperatures and gently extracted for 10-14 days prior to pressing, then matured for 12 months prior to blending and bottling. French oak plays a suppor tive role to the wine’s generous ripe dark fruits.
